Tips for Baking With Gluten-Free Puff Pastry

But we know that both experienced and novice bakers alike find puff pastry a little intimidating. Take a look at our tips for baking with gluten-free puff pastry and get the most out of your dough.

Remove It From the Freezer Before Baking

You should always store frozen puff pastry in the freezer when you aren’t planning to start a baking project. But frozen puff pastry dough can be tough to work with, which can lead to frustration. We often recommend taking the dough out of the freezer the night before you plan to bake and letting it thaw in the fridge overnight. The next morning, the dough’s consistency and texture will be ideal for baking.

Roll It Out

When you open a package of puff pastry dough, it might look thicker than you expected. That doesn’t mean you have to keep it that way, though. We usually recommend using a rolling pin to roll out puff pastry until it’s about a quarter inch thick. When you bake it, the dough will expand, giving it that signature puff pastry look.

Keep Extra Flour on Hand

When you roll out gluten-free puff pastry dough, you’ll notice that it can be sticky. Rather than letting it stick to the rolling pin or countertop, always have a little extra flour on hand. Sprinkle the surface before you start rolling out the dough, and don’t hesitate to sprinkle a little extra as needed. We recommend using potato starch, but just about any gluten-free flour will work well with our puff pastry.

Don’t Forget the Prep Process

Gluten-free puff pastry dough might taste magical, but it you still have to treat it like you would other types of dough. That means you should consider adding an egg wash to the top of turnovers and other puff pastry packages to keep everything together. In addition, you’ll want to create vents on top of pot pies to make sure the hot air can escape properly.

Save Your Scraps

Many of our puff pastry recipes suggest that you cut and slice the dough in creative ways. Don’t waste the scraps though! Re-roll the scraps to create mini turnovers, pot pies, empanadas, and even tart shells. You’d be surprised at just how far a little puff pastry dough can go!
